Craig started cooking BBQ professionally in 1995 and joined up with Ubons BBQ of Yazoo in 1998. The BBQ Ninja is a nickname that was given to him in 2009 because of his unique look of a bandana and sunglasses when he cooks. Over the years, Craig has been a part of over 40 Grand Championships won, a Shoulder World Championship with another 2nd and 3rd, as well as 12 other top 10 finishes at Memphis in May. Most recently he finished 6th in the world in Whole Hog 2018.
Throughout the year Craig travels the country bringing barbecue to people all over the United States and in 2017 he even traveled to Australia to bring American BBQ down under.

In 2018, Craig was honored to cook in the world-famous James Beard House. He has appeared on the Food Network Show Chopped Grillmasters in 2017. Also, Craig taught a cooking class at Meat Church with Matt Pittman that featured wild game that he hunted and harvested. Dishes included alligator, duck and venison and Craig told the stories of how he hunted it, killed it, cleaned it, cooked it and ate it.
Craig is an avid hunter and fisherman when he’s not barbecuing. He especially loves to hunt alligators!!
