​A graduate of the École Hôtelière de la Capitale (Quebec City) in 1999, Vincent started directly in the big leagues by working in the most prestigious gourmet restaurant in Quebec where he became sous-chef six years later. He then worked for three Italian families in the most famous restaurants in Quebec City, where he discovered a real passion for simple traditional cuisine as well as for a dazzling business model, focused on passion and performance. 

Subsequently, at the Boucherie of the Eumatimi farm, Viincent deepened his knowledge and techniques. He honed his skills by working closely with the late Mario Pilon, a cattle farmer-turned-butcher specializing in old-fashioned French cuts. Thanks to Mario's know-how, he was introduced to the profession of breeder. In addition to internships in France, nutrition courses and sommelier training, Vincent also taught at the École Hôtelière de la Capitale in Québec City.

During his many trips across North America as part of the television series entitled Bouffe en Cavale (Food on the Run) broadcast on the Évasion channel, which he co-hosted for seven seasons, Vincent developed a close bond between his own style of cooking, contact with producers and the social commitment of a restaurant.

In December 2015, he opened his own restaurant, Chez Biceps B.B.Q. (Biceps B.B.Q.’s), which highlights local products in an environment strongly inspired by the barbecue culture of the southern United States. 

An original wine list, microbrewery beers and a large selection of North American whiskeys sit alongside the artisanal smoker, which is fed only with sugar maple wood. Exceptional meats, unique spice blends, bone-based sauces and reductions of all kinds, homemade desserts -- unwavering quality and concern for perfection even down to the smallest detail of all accompaniments which are cooked just before serving.

At Biceps B.B.Q., it's 22,000 pounds of smoked meat served each year. The restaurant is always sold out 3 months in advance.
